Chocolate & Butterscotch Chip Chocolate Cupcakes


I made these for my mum's birthday this weekend and they were a big hit! This recipe is adapted from Betty Crocker's Best Chocolate Cake.

Chocolate & Butterscotch Chip Chocolate Cupcakes
2 cups all-purpose flour
2 cups white sugar
1/2 cup butter
1 1/2 cups milk
1 tsp baking soda
1 tsp salt
1 tsp vanilla
1/2 tsp baking powder
2 eggs
1/4 cup cocoa powder
1 tsp cinnamon
1 cup milk chocolate chips
3/4 cup butterscotch chips

1. Preheat oven to 350F.

2. Cream butter and sugar until light and fluffy. Add eggs and mix well.

3. In a separate bowl, mix together with a fork the flour, baking soda, salt, baking powder, cinnamon, and cocoa powder.

4. Pour milk into liquid measuring cup and add 1 tsp vanilla.

5. Add dry ingredients to butter / sugar / egg mixture, alternating with the milk / vanilla mixture. Blend after each addition until completely mixed.

6. Add chocolate and butterscotch chips. Mix well, using a spoon, into the batter.

7. Add batter to cupcake pan lined with cupcake papers. Bake 18-20 minutes or until toothpick inserted in centre of cupcake comes out clean.

8. Cool completely on wire rack. Frost with chocolate buttercream frosting and decorate with sprinkles.

Makes approximately 2 dozes cupcakes. These cupcakes freeze well.
