This one is straight from my Betty Crocker cookbook. A winner every time!
Basic Buttercream Frosting
3 cups icing sugar (powdered or confectioner's sugar)
1/3 cup butter*
1 1/2 tsp vanilla
1 to 3 tbsp milk
1. In a mixing bowl, combine butter and 1 cup of icing sugar. Blend well. Add vanilla and 1 tbsp milk. Blend on medium speed. Add another cup of icing sugar and another tbsp of milk. Blend. Add the final cup of icing sugar and tbsp of milk. Mix on high.
2. The icing should have a nice, creamy consistency, yet be firm enough to stand in peaks. If your icing is too thick, add milk, tbsp by tbsp, until you're happy.
3. If your icing is too thin, you'll need to add small amounts of icing sugar and butter slowly and carefully to get the right consistency.

*I never use margarine in any of my baking. It never turns out and tastes awful! Butter is best. :)
